Figgy Jam Muffins

Are you watching the Olympics? I like watching gymnastics even though I was never even close to being a gymnast...ever. I did take dance and gymnastics when I was little, and the balance beam terrified me. So even though I wasn't cut out for it, I think it's insane what the human body can do. Our women's vaulting looked ridiculous last night! And the men on the high bar? I just can't fathom what that feels like. But muffins, muffins I can fathom.

Because it's Monday and Mondays are hard, I'm showing you an easy fig jam muffin. You can buy the fig jam or make your own. These muffins aren't too sweet, so you won't get a major sugar high and then crash and burn halfway through your morning. Perfect for work mornings.

Buttermilk Dinner Biscuits

Y'all, a bird scared the bejeesus out of me the other day.  See, we've had such a mild winter and beautiful, warm weather lately, so the wildlife has started to return to my backyard.  The little lizards are figuring out the porch, and the birds are darting back and forth between the bushes.  Except I think two of them were fighting.  Or heaven forbid, mating.  It looked like a fight, so we'll go with that.  Anyway, these two birds were flying at each other and then they were flying at the porch and BAM!  One of them hit the screen, and I almost spit coffee everywhere.

Brie Bites

I'll be real.  I'm in total Valentine's mode right now.  Not that I'm, like, in love with it or anything.  That would be silly.  But there's so much food you can make for it!  It's a serious excuse to go decadent with either your friends or significant other.  I don't so much mind that it's a greeting card holiday because I like funny cards.  And when have I ever turned down chocolate?

But who says you have to do "traditional" things on Valentine's day?  For reals, going out to dinner can be a nightmare.  Plus, it's very rare that it lands on a weekend anyway.  I think it's much more interesting and thoughtful to cook.  And so what if you don't have someone special to spend it with?  Friends are special, too.  I'm really speaking to the ladies here because I don't think I've ever met a guy who lamented the fact he didn't have someone on Valentine's day.  Okay, okay.  I'm hokey.  I like to celebrate the people I love with food.  And if there's a designated day on the calendar to do it, I'm gonna have fun with it.
