Roasted Red Pepper Sauce

I had a thought that I need to know if other people think. See, I was listening to the radio, and the host was talking about this girl that won their iheartradio contest. She went jet-skiing with someone, got glittered by Ke$ha, and was hanging out backstage with Pitbull. And I just want to know, if that were me, what in the world would I say to Pitbull? Or Kesha. Like, would we talk politics? Our childhoods?

DSC_0805_edited-1 This sauce was much easier to figure out. Probably because I didn't have to talk to it. It's perfect for the weeknight because it comes together in about 10 minutes and can go on just about anything.

DSC_0760_edited-1It's beyond simple. You need: roasted red peppers, a shallot (a bit of onion will do), (toasted) walnuts, garlic, dried oregano, parmesan, and olive oil.

DSC_0767_edited-1 I made a last-minute decision to cook the shallot and garlic to take a bit of the edge off. A few minutes over medium-low heat until they're softened a bit really makes a difference.

DSC_0770_edited-1 I think we can agree that freshly shredded Parmesan beats the pants off pre-shredded Parmesan any day. Seriously, just buy a block of Parm and shave a little here, grate a little there, and use the rind in soup. Good cheese is so worth it!

DSC_0772_edited-1 Ingredients go into a food processor or mini chopper. I'm sure a blender will work just fine as well.

DSC_0783_edited-1 It's up to you just how pureed you want it. I went with a pretty smooth texture. Taste and season with salt and pepper to your liking. You probably won't need much salt since the cheese is pretty salty on its own.

DSC_0794_edited-1 I usually have mushroom ravioli in the fridge because it's so dang easy to top with a sauce for a quick meal. Pick your favorite pasta and run with it!

Roasted Red Pepper Sauce (makes about 1/2 cup)

1/4 shallot, roughly sliced
2 small cloves garlic (or 1 larger clove), roughly sliced
Handful shelled walnuts, toasted
1 jarred roasted red pepper
1/4 c shredded Parmesan
1/2 tsp dried oregano
2 tbs olive oil, plus more if needed
Salt & pepper to taste
  • Begin by sautéing the shallot and garlic in a smidgen of butter or olive oil over medium heat. Cook until the shallot and garlic are softened a bit, about 3-4 minutes.
  • In a food processor, combine the cooked shallot and garlic, walnuts, red pepper, Parmesan, and oregano. Pulse until mostly smooth. Taste and season with salt and pepper. Add the olive oil and pulse until the sauce reaches your desired consistency.
  • Suggestions for use: as pasta sauce, on toasted baguette with goat cheese, in a grilled cheese.

Shrimp, Grape Tomato, & Artichoke Fettuccine

This one time, I was driving down the road with my windows down and Carrie Underwood on my radio. It was one of the first really pretty spring days we'd had, warm air and a little breeze. I was wearing a sundress and big sunglasses. I was also singing louder than Carrie, which I didn't realize was possible. I was at a stoplight and was just finishing up "Cowboy Casanova" when I noticed a young boy hanging out of the back of a truck cab and fervently applauding my performance. I blushed. And I laughed because I earned that applause! I...have no shame it would appear.

Get your face in this pasta. It's one of those 30 minute, weeknight-friendly dinners. It's full of things I lurve, like shrimp and artichokes and capers. Get to it!

Goat Cheese and Pancetta Orecchiette

I hope everyone had a lovely Halloween!  I drove up to Columbia to see my Grady-bear.  He was Darth Grady, Sith Lord.  Yeah, not a pumpkin or a sweet pea or any other vegetable.  Villain from Star Wars.  Totes appropriate.  In any event, I made chili per our Halloween tradition.  Nom.

We had a few trick or treaters and started watching a couple of horror movies.  Like TrollHunter.  Oh yeah.  A Blair Witch-style movie, Norwegian of course, about these college kids finding out trolls are real.  Did you know trolls turn to stone?  Well some explode, but I don't remember specifically a story where trolls turn to stone.  Did you know the Norwegian word for troll is troll?  According to Wikipedia the Scandinavians have trolls on lock.  So there you go, all you wanted to ever hear about trolls.

This pasta is the antithesis of a trolls.  It's creamy, comforting, and incapable of becoming a statue.  It's got goat cheese, pancetta, Parmigiano, and tomatoes that come together in a risotto-style pasta to make your life complete.  Complete, people.

Cacio e Pepe

I feel like I've been a little remiss in my posting.  Eep!  It's been a busy few days, and I promise I've got some good stuff comin' at you.  Like apple hand pies.  Chyeah.

I went up to Columbia for the Vandy game.  It was unreal being back in Williams-Brice Stadium again.  I realize I was just there last year for the Alabama game, but it was a different feeling knowing I'd be able to see more than one game this season!

But today is about the dinner I made for my grandmother's birthday last Tuesday.  Better late than never right?  P.S. Does anyone else hate it when a person uses "then" instead of "than"???  It belongs in the same category of grammar pet peeves as to, too, two and there, they're, their.  This...has absolutely nothing to do with food.  Y'know what does?  Cacio e pepe.  Cheese and pepper.

Browned Butter and Asparagus Pasta with a Side of Disney

So I watched Snow White today.  It's funny how as a kid you don't necessarily realize how creepy cartoons can be.  I hadn't seen the movie in probably 15 years, so I didn't remember some of the details.  Like how when Snow White is running through the forest (after the huntsman realizes he can't follow the Queen's orders and bring Snow White's freakin' heart back in a box) and appears to have an acid trip.  How else do you explain the trees coming to life and logs turning into alligators?  Then at the end the Queen, disguised as a hag, falls to her death and is crushed by a boulder.  And on top of that, the vultures who had been following her circle around where she went down, presumably to snack on her carcass.  How is this a kid's movie?!

Doesn't that get your appetite goin'?!  Well forget about creepy children's movies and focus on an easy weeknight pasta dish.

Roasted Red Pepper Pasta

Sometimes you just want to make something that has, like, 5 ingredients.  Seriously, whole shows are devoted to the concept of simplicity.  5 Ingredient Fix, anyone?  Because maybe you're tired or you've had an uber-busy day.  Or just don't feel like broasting and basting and filleting and marinating and heightening the umami.  Just... straightforward please.

I've made a handful of Pioneer Woman recipes, including her deadly cinnamon rolls.  I withered (in a good way) when I ate one for the first time.  I've made her roasted red pepper pasta before, and it comes together in no time if you use jarred roasted peppers.  PW roasts her peppers, which isn't difficult.  I'm definitely not averse to roasting your own peppers, it's just that red bell peppers for some reason have been expensive lately.  So for simplicity's and my budget's sake, I used jarred peppers.
