Orange & Cinnamon French Toast

Let's talk breakfast. It's kind of my favorite meal. Y'know, besides dessert. That counts as a meal right? (I mean it should the way I do it.) I gravitate toward the sweet things personally: pancakes, waffles, French toast.

And no matter how many fancy-schmancy ways I make French toast, I still like my mom's the best. White bread, simple egg/milk mixture, and syrup. But if I can't have my mama's, this one will surely do in a pinch. It's got a nice tang from super-good buttermilk and orange zest and a hint of warmth from a sprinkling of cinnamon.

I used: semolina bread, cinnamon, orange zest, eggs, buttermilk, and salted butter.

You need a nice shallow dish that will hold the bread. Pour in the milk and crack the eggs in.

A fork works for breaking up the yolk and incorporating the eggs into the buttermilk.

Cinnamon and orange zest add extra flavor.

I chose this semolina bread partly because I had it on hand and partly because it was a nice bread for French toast. Even though it was sliced on the thinner side, a little staleness made it sturdy enough for soaking.

I let it sit a few minutes on each side. French toast is commonly made with thick slices of challah or other sturdy bread that are probably a little stale. Because fresh bread will fall apart in the liquid mixture. So really, French toast is economical. Also, I definitely had enough liquid left to do another slice, so I made another slice. Because that's how I roll.

I melted a little butter in a cast iron skillet. You could use another sort of non-stick skillet, but you want to make sure your toast pieces will fit.

Getting the heat right can be tricky. You want it warm enough to, y'know, cook the toast, but not so hot that it just cooks the outside and leaves the inside soggy. My preference is to start it on medium-low to cook both sides through and then turn the heat up to medium to get a nice crust on the very outside.

Kind of like this. I like the crispiness the edges get and the little caramelized spots on the bread.

And can we just agree to use real maple syrup? Like the for real for real stuff. Because this is kind of why syrup exists.

Orange & Cinnamon French Toast (serves 1 very hungry lady or maybe 2 sensible people)

2 large eggs
1/2 c buttermilk
1/2 tsp cinnamon
1 tsp orange zest
2-3 slices of sturdy bread (staler is better in this case)
Salted butter, for sautéing
Maple syrup, for serving
  • Whisk together eggs and buttermilk in a shallow dish. Add cinnamon and orange zest and stir to combine.
  • Lay the pieces of bread in the liquid mixtures. Let them soak 3-5 minutes on each side. While bread soaks, heat a cast iron skillet on medium-low heat. Add a hunk of butter and let it melt. 
  • Gently place soaked bread pieces in the warm skillet. Let cook until lightly browned on one side and flip. Let cook until lightly brown on the other side and increase heat to medium. Let the toast crisp around the edges and develop darker brown spots and flip. Crisp the other side and remove from skillet.
  • If you're making a big batch of French toast, I advise heating your oven to 300º and turning it off. Place cooked French toast on a plate and set in the oven to keep warm.
  • Serve French toast with extra butter and syrup. And bacon. Or bacon substitute if you don't partake in the pig.

Cinnamon-Orange Shortbread Cookies

I think there's nothing my family loves more than a shortbread cookie. We've always had pecan sandies laying around like other families might keep Lay's potato chips or Oreos. But you know me, why buy what you can make?

These shortbread cookies are gussied up with cinnamon sugar and orange zest. Which happens to go perfectly with Russian tea. Please tell me you know what Russian tea is. It's really not tea or Russian, but it's so perfectly my childhood.

A few simple ingredients make these cookies. Powdered sugar, flour, cinnamon sugar, butter, more cinnamon, nutmeg, salt, baking powder, and orange zest.

Combine the flour, salt, baking powder, spices, and orange zest in a medium bowl.

Now what you should probably do here is cream the butter first and gradually add the sugar. Or you can be like me and forget what the instructions actually say and do it all at once.

Gradually add in your flour mixture.

Stop mixing just when a dough forms.

Divide the dough into two 1/4" disks on a sheet of wax paper. Cover with another sheet of wax paper and chill 30 minutes to an hour. Or y'know 10 minutes in the freezer because I can't read instructions and I'm occasionally impatient.

Make your life easy and roll out the dough between the two sheets of wax paper.

Your life will not be as easy if you use this snowflake cookie cutter. A tree is wayyy easier to use. Less tight spaces.

Lay the cut-out cookies on a parchment-lined cookie sheet. Sprinkle the cookies with cinnamon sugar before baking.

You end up with seasonally-appropriate, fragrant cookies.

It's like my childhood Christmas met my adult Christmas and they're way cool with each other.

Cinnamon-Orange Shortbread Cookies (makes about 1 1/2 dozen cookies, depending on size)
Adapted slightly from Southern Living

1 c + 2 tbs all-purpose flour
1 tbs orange zest
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp baking powder
Pinch of salt
1/2 c unsalted butter
1/4 c + 2 tbs powdered sugar
Cinnamon sugar, for sprinkling (1/2 tbs sugar + 1/4 tsp cinnamon)
  • In a medium bowl, combine flour, orange zest, cinnamon, nutmeg, baking powder, and salt. Whisk to distribute evenly.
  • In a large bowl, cream together butter and powdered sugar. Gradually add the flour mixture and mix just until a dough forms. 
  • Turn the dough out onto a sheet of wax paper. Divide in half and form two 1/4-inch disks. Cover with another sheet of wax paper and chill 30 minutes to an hour.
  • Preheat your oven to 350º and line a baking sheet with parchment paper. Roll out disks between the two sheets of wax paper. Cut out shapes with 3-inch cookie cutters or simply cut into rounds. Set each cookie about 1.5 inches apart on the baking sheet. 
  • Sprinkle with cinnamon sugar and bake 11-13 minutes or until just golden brown around the edges. Cool fully on a wire rack.

Cranberry Oatmeal Cookies

Oh, where to begin? I think with good news. So, I'm living in Columbia on a permanent basis now. Because I got a job! With a South Carolina-based company, Hotelguides.com. I'm super-excited because they seem super-awesome. My first week was last week, so training kind of derailed my normal shooting schedule. It's cool though, you're still totally getting cookies.

And these are some damn tasty cookies. I'm a sucker for dried cranberries and oatmeal cookies. So is the baby. Seriously, Grady l-o-v-e-s dried cranberries. Especially if they're in this goat cheese spread. I know, right? See, I give him little tastes of whatever I'm eating, and sometimes with cheeses he'll take it and spit it out. But he was all. about. that goat cheese.

And I've always been a fan of oatmeal cookies. No, I don't have those trust issues some people claim to have from eating an oatmeal raisin cookie and expecting chocolate chip. No, siree. I think I get it from my grandmother. She likes raisin pie.

Pumpkin Pie Spice

It was...a heckuva a week. In between Halloween, a family emergency (don't worry, everything's fine), and just general stuff, I was a leetle busy. Also, I met my future self at Fresh Market's Thanksgiving sampling event.

Okay, so I know there are 1,284,792 "recipes" for pumpkin pie spice floating on the interwebz. This is my personal version. It's heavy on the cinnamon with a floral finish from cardamom.

You'll need: freshly grated nutmeg, allspice, cinnamon, cardamom, cloves, and ginger.

Pumpkin Scones

Have you ever imagined having a conversation with someone but then it doesn't turn out at all how you pictured it? Yeah that actually didn't happen to me the other day. See, I bought a Reese's cup shaped like a pumpkin because you know the seasonal Reese's are the best and are never weird and powdery because they can't sit on the shelf that long. Will and I have talked about this before (probably because we're both weird), so I thought he'd appreciate that there's a seasonal Reese's cup out. I also knew that when I mentioned that it was pumpkin-shaped he'd think it actually had pumpkin in it. And let's just say pumpkin does not top his list of favorite foods.

Blueberry Buttermilk Cinnamon Rolls

I am evidently on a breakfast kick. I do that sometimes, get really into certain foods for a while. Like the spinach smoothies I've been making for weeks (promise, you can't taste the spinach!). One time I went on a ham sandwich bender. And lately I've had a MAJOR sweet tooth. Maj.

Breakfast is my favorite meal by far. Well, brunch really is because when you can get shrimp and grits and muffins in the same meal I'm there with bells on. I tend to gravitate towards sweets when I'm eating a big breakfast...with a side of bacon or sausage. See, that's another thing I love about breakfast. You can get all the important foods: pig, dessert, fruit (sometimes), butter, and bread. At any rate, cinnamon rolls rank right up there with my preferred breakfast foods. Right under French toast.

Apple Bourbon Balls

Bourbon balls: The classy way to get schnockered around the holidays.  I kid of course.  There's no way to be classy and get schnockered.  There are sneaky ways to get schnockered, and bourbon balls might be at the top of the list.  Let's be honest.  You're probably not going to eat bourbon balls and sip on seltzer.  You're probably going to have a glass of whatever floats your boat and toss a couple of bourbon balls in your mouth.  And the alcohol doesn't get a chance to cook out because this is a raw cookie.  So.  There you go.

Gooey Overnight Sticky Buns

I'm happy to report the tree is still standing.  It's even straight I think.  Of course, I didn't realize it was leaning before, so maybe I'm not the best judge.

So...I ran 30 minutes today.  For most of you, that's probably not a huge deal.  But for me, it's a mega-huge deal.  I'm not sure I've ever run 30 minutes in my life.  That's not to say I've never exercised more than 30 minutes in my life.  I used to do Zumba for an hour on the reg.  But running and enjoying it always eluded me.  I've been following the Couch to 5k plan loosely, and today I finally did 30 minutes!

In honor of that achievement, I give you these sticky buns.

Cranberry-Cinnamon Goat Cheese Spread

A big congratulations to my dear friends Jeremy and Emily on their precious little boy, Benjamin!  I can't wait to meet the little guy!

I'm super excited for the National Peanut Festival tomorrow.  I'mma get me a corndog and about 15 other fried foods.  Maybe not 15.  But it's a fair, so I have to indulge.  I'm pretty sure it's illegal not to.  Obvi I had to run today to even think about gettin' my fair on tomorrow.  Word.  We might even ride the Scrambler!

Warm Apple Crisp

Goodness gracious, y'all.  I've been cookin' up a storm today in preparation for the game against Tennessee.  We've got cookies, fancy peanuts, feta cheese squares, pumpkin dip, and more to come.  Last night I made this fancy goat cheese spread and ate it while I watched Bridesmaids.  Um, can we talk about that movie for a sec?  I laughed.  I almost cried (what?!).  I wholly admire Kristen Wiig for committing to a role.  Because the scene where she goes berserk at the bridal shower and tackles the giant cookie, rolling around on the ground with it...I have no words.  And kudos to Melissa McCarthy for being a total scene stealer.  I know I'm like a year behind in finally watching this movie.  And Kristen Wiig's character is a baker in the movie.  So ta-da.

Speaking of baking, you have to make this apple crisp.  Martha Stewart never fails me.  I make her food, and it turns out how it's supposed to.  Buh-bam.  This crisp so simple to put together.  Some butter, oats, spices, and apples come together to make a warm bowl of happiness.  Apples are kind of my favorite fruit too.  Especially honeycrisps.

Sugar? Bread? Why Wouldn't You?!

My dog is kind of a weirdo.  Evidence:
There was a bag on the floor, and he climbed right in.  He did a few turns and plopped down inside.  Weird.

What's not so weird about him is his absolute terror when he sees lightning.  You see, when he was just a puppy, a puppy not even the least bit concerned about thunderstorms, a giant ball of lightning hit the pecan tree outside our house.  It made a spectacular bang and obviously was very bright.  Since then, Puddin just hasn't been the same.  Now when there's lightning he comes into my room.  I think it's harder to see the lightning from my window, so he lies down and goes to sleep.  Poor baby.

Ya know what makes me feel better when there's lightning?  Cinnamon bread.  Specifically, Joy the Baker's cinnamon sugar pull-apart bread.
