As I stare at the pouring rain and my backyard that's slowly turning into a lake, I can't help but want this salsa. Y'all I fully expect to see some fish swimming out here soon. We've got a flash flood advisory, so I can't even go grocery shopping. It's still not as bad as what Charleston is getting right now. There are people kayaking in the Market.

Roasted Pineapple "Piña Colada"
This drink saved me. I've had a little spring cold, and I wanted something that was full of good health but was not the green smoothies I've been drinking for weeks. This....was like a piña colada...but not. I mean it had the flavors I so enjoy but without the outrageous calorie count. Yes, the girl who puts butter on everything would like to shave a few cals off here and there. It's my prerogative!
I had this for lunch, and since I'm not a character on Mad Men...there's no rum. But you could totally add a little spiced rum to this for a poolside treat that will still make you feel good wearing that bikini. Or one-piece! I support the wearing of both. Personally, I have a Ralph Lauren one-piece that I love. And I would gladly sip this on a sunny day by the water.
The ingredients are simple, but they give such a punch of flavor. Fresh pineapple, coconut-almond milk, Greek yogurt, fresh ginger, and a wee touch of honey.
Lay pineapple wedges on a baking sheet lined with parchment paper. Drizzle just the tiniest bit of honey on top and roast in the oven.
They'll get just a touch of caramelization.
Then everything goes in a blender. I used my microplane to grate the ginger. It keeps you from getting big chunks of ginger. I also added a few ice cubes after the first blend.
It gets nice and frothy.
A chunk of fresh pineapple garnishes the glass. Coconut, ginger, and pineapple. Make it your favorite summer drink!

Drizzle of honey
1 1/4 c coconut-almond milk

4-5 ice cubes

- Preheat oven to 400º. Line a baking sheet with parchment paper and place the pineapple wedges on it. Drizzle with a little honey, about a teaspoon. Roast in the oven 15-20 minutes, turning once halfway through. Let cool.
- In a blender, combine the pineapple, milk, yogurt, and ginger. Blend until smooth. Add the ice cubes and blend again until smooth. If desired, strain to remove pineapple pulp. (I totally didn't do this) Pour into glasses and garnish with fresh pineapple chunks.

Pineapple Souffle
One of my favorite things about the holiday season, and there are many, is the music! I love Christmas music with all my heart. Will doesn't share this enthusiasm, though I do know he likes the Mariah Carey classic "All I Want For Christmas Is You." Don't tell him I told you. I'm kidding, he's totally going to read this.
Anyhow, I have my favorite versions of just about every song. For instance, I have a special place in my heart for Barry Manilow's rendition of "Jingle Bells." I can hear the judgment already. Whatevs, Manilow makes my heart go pitter patter. Part of it stems from this Christmas tape my sister had that we listened to religiously during Christmas season. Yes, I said tape. This was when every car still came with a tape player. We loved that tape. f you want a laugh, check this out. It gets me every time.
Did you know Justin Bieber has a Christmas album? I previewed it on iTunes for a lark. Normally I'm okay with the Biebs. I'm not a huge fan, but I'll dance to that one song. But this Christmas album is a travesty. I can't even deal. The tonic to this album illness is Michael Buble's Christmas album. In fact, I'm going to Target this week just so I can get the extended version. It's got the vibe I want when I listen to holiday music. I don't like when pop artists do holiday songs; it just sounds weird to me. I like the old school Rat Pack sound. And Barry Manilow.

Not Your Granny's Pineapple Upside-Down Cake
Unless your granny likes a kick of rum and cardamom. Seriously, it was cardamom craziness.
Does your granny use fresh pineapple? Okay, I'll stop talking about your granny. Because maybe she makes an out-of-this-world pineapple upside-down cake.
I'm fairly certain I've never had pineapple upside-down cake before this one. Who knows why? I love pineapple, and I love cake. The best thing about this cake was definitely the fresh pineapple because we'd let one get really ripe on our counter. After my mom cut it up I taste tested a piece. For good measure of course. Gaw, it was sweet and pineapple-y and yum.
